<p>This is a standby summer meal. Pita bread from <a href="http://www.marczykfinefoods.com/" target="_blank">Marczyk&#8217;s</a> (the best), almond-stuffed green olives + pepperoncini on the side. I like to use tin foil to cradle the pita like a taco.  Recipe adapted from <a href="http://allrecipes.com/Recipe/Chicken-Souvlaki-Gyro-Style/Detail.aspx" target="_blank">allrecipes.com</a></p>
<ul>
<li>chicken marinade: Wishbone Italian dressing</li>
<li>4 skinless, boneless chicken breast halves, grilled</li>
</ul>
<p>tzatziki sauce (cucumber sauce):</p>
<ul>
<li>1/2 cup seeded, chopped cucumber</li>
<li>1 teaspoon kosher salt</li>
<li>1 1/4 cup plain greek yogurt</li>
<li>1 tablespoon lemon juice</li>
<li>1/2 tablespoon rice vinegar</li>
<li>1 teaspoon olive oil</li>
<li>1 clove garlic, minced</li>
<li>1 tablespoon chopped fresh dill</li>
<li>1/2 teaspoon oregano</li>
<li>kosher salt to taste</li>
<li>freshly ground black pepper to taste</li>
</ul>
<p>other stuff you need to put it together:</p>
<ul>
<li>4 pita bread rounds</li>
<li>1 heart of romaine lettuce, cut into 1/4 inch slices</li>
<li>1 red onion, thinly sliced</li>
<li>1 can of drained and rinsed chickpeas</li>
<li>cherry / grape tomatoes</li>
<li>pepperoncini</li>
<li>green olives</li>
<li>crumbled feta cheese</li>
</ul>
