Amy’s Kitchen makes lots of canned soups, sauces, and frozen entrees I really like. I think they’re all organic, and a lot of them are vegan. Some are also wheat-free and gluten-free.
One of my favorites is the Thai Coconut Soup (also called Tom Kha).
The soup is a coconut milk base with authentic Thai spices, including [...]

I am currently on a quest to prepare food at home more often. In my opinion, there are many reasons to enjoy food at home:
save money
save time
healthier (low saturated fat and calories)
more nutritious (fresh ingredients, quality I get to select)
organic (I like to eat organic when I can, and not many restaurants are able to [...]

Quinoa is an alternative grain. Originally from the Andes, it has an interesting taste and shape and is quite healthy. According to some sites I’ve seen, it is a complete protein. More on quinoa.
Ingredients:
1/2 cup quinoa
14 oz can of kidney beans (undrained)
15 oz can diced tomatoes (undrained)
2 cups of water
Rinse water

This is from a random website, but I’ve made it a few times and enjoyed it every time. I especially enjoy doubling or tripling it. Doubling it requires a 2 gallon pot. (Now I have a camera–prepare yourself for pictures from someone who believes that form follows function from a respectable distance!)

My namesake!
This soup is easy to make and keeps for a long time (1-2 weeks), unlike its ingredients. I found it on a livejournal a few years ago.
Ingredients:
Water
Greens of any kind (kale, spinach, lettuce, beet leaves, turnip leaves, chard, etc)
Bouillion cubes
Potato (optional). Adds some body to the soup.
Directions:
Use a large pot, as the [...]

I mentioned making applesauce in my previous post. Here’s the recipe I use. It takes a fair bit of time so I like to do large batches.
Ingredients:
Apples
Water
Optional: Cinnamon, sugar/honey
Directions:
Wash, core, and remove bad spots from apples. Cut into quarters or smaller. I don’t remove the skins because I like the texture.
Put [...]

This dish is a favorite during the holidays. It’s a great addition or alternative to the traditional potato dishes: mashed potatoes and candied sweet potatoes. You can easily make it larger or smaller by adjusting the quantities, just keep the ratios roughly the same for the right balance in the “sweetness” of the roots. [...]
