Chocolate Chip Oatmeal Cookies (dairy-free, wheat-free)

July 10th, 2008 · No Comments · Dairy-free, Dessert, Recipe, Wheat-free

It will be hard for your dairy + wheat loving friends to believe these yummy cookies are dairy-free, wheat-free and reduced fat. So there is no need to tell — unless they say they’re on a diet, then you can use those words to talk them into eating one (tee hee).

Ingredients:

1 1/2 cups sifted spelt [...]

Grilled potato

July 9th, 2008 · No Comments · Dairy-free, Healthy, Recipe, Side, Wheat-free

So you’re probably firing up the grill a lot this summer. While you’re cooking your main dish, I recommend giving any extra space on the grill to a tasty potato. It’s easy, and it’s tastier than baked because the flavor is cooked in. (And way healthier than the potato chips or french fries you might [...]

One of our favorite summer time entrees is this Ginger Tamari Salmon poached in a foil packet on the grill. The foil keeps all the flavors. We were lucky to learn about this recipe from our friend Earth in Boulder.

Preparation is very easy!

Ingredients:

salmon (either fresh or previously frozen)
tamari
ginger root

Preparation:

Put your salmon filets on a [...]

Chocolate Chip Mulberry Spelt Muffins

June 22nd, 2008 · 1 Comment · Breakfast, Dairy-free, Healthy, Recipe, Soy-free, Wheat-free

These muffins are a very tasty, healthy, dairy-free breakfast treat. Or snack anytime (grin). They’re tastiest when they’re still warm from the oven, but good for 2 or 3 days, or even longer if you store them in the fridge. This recipe is adapted from the Joy of Cooking.

The berry you see in the middle [...]

Spring Parmesan Chicken

April 27th, 2008 · 2 Comments · Dinner, Food, Gluten-free, Healthy, Recipe, Soy-free, Wheat-free

Most dishes I make are gluten-free and contain less than 10 ingredients. As a designer I typically believe that less is more and I believe that approach may also apply to food. I try to always pair a wine that I really feel goes best with the dish so that if you are entertaining or [...]

Tomato + Mozzarella Salad

April 25th, 2008 · 2 Comments · Food, Recipe, Side, Vegetables

As the weather heats up, it just feels better to transition to lighter meals. Combined with enjoying this dish in an outdoor setting (the deck overlooking the golf course) and a fine glass of Pinot Noir (I recommend La Crema, 2005), life doesn’t get much better. This evening we’ll be having just such a dinner. [...]

One of our favorite recipes during the cooler months is my roasted new potatoes recipe. It’s simple, healthy and can be prepared quickly and best of all, everybody loves it. I serve this as a side dish to grilled cherry-chipotle chicken breasts and fresh from the garden steamed asparagus.
Roasted New Potatoes
1lb small red potatoes (may [...]
