I bet you that your csa potatoes are from this year. Maybe the supermarket ones were stored for a while. ? I’m not an expert. I just remember my grandparent’s barn (they were potato farmers) filled with potatoes. A mountain of them, literally.
You shouldn’t store potatoes in the fridge, it makes the starches break down faster and they become sweet…wonder if they go bad faster too? You should try to store them between 45-50 degrees I believe, like cellar, if you can find one!

Isn’t the fridge a cool dark place? That’s what I thought, at least.
These potatoes were from the super market–the CSA potatoes don’t seem to behave this way.
