Kolache: Slovak Pastry

Kolache means cookies in Slovak. (Kolache, also spelled kolace, kolach, or kolacky, plural is koláče). A traditional Slovak pastry, served at Christmastime or other special occasions, these koláče were made from scratch by my first-generation Slovakian grandmother. The rich, moist apricot filled pastry is baked as a squat loaf, then served sliced sprinkled with powdered sugar. Other fillings (poppyseed or my favorite: nut) are tasty too.

I haven’t tried to make kolache in Colorado (altitude and humidity may be tricky to get the dough to rise properly with the original recipe), but I will and when I do, I’ll share the recipes and results.
