This is a standby summer meal. Pita bread from Marczyk’s (the best), almond-stuffed green olives + pepperoncini on the side. I like to use tin foil to cradle the pita like a taco. Recipe adapted from allrecipes.com
- chicken marinade: Wishbone Italian dressing
- 4 skinless, boneless chicken breast halves, grilled
tzatziki sauce (cucumber sauce):
- 1/2 cup seeded, chopped cucumber
- 1 teaspoon kosher salt
- 1 1/4 cup plain greek yogurt
- 1 tablespoon lemon juice
- 1/2 tablespoon rice vinegar
- 1 teaspoon olive oil
- 1 clove garlic, minced
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon oregano
- kosher salt to taste
- freshly ground black pepper to taste
other stuff you need to put it together:
- 4 pita bread rounds
- 1 heart of romaine lettuce, cut into 1/4 inch slices
- 1 red onion, thinly sliced
- 1 can of drained and rinsed chickpeas
- cherry / grape tomatoes
- pepperoncini
- green olives
- crumbled feta cheese
